Ingredients
  

  • 6 large fresh jalapeños halved lengthwise and seeded
  • 8 oz cream cheese 225g, softened to room temperature
  • 1 cup sharp cheddar cheese about 4 oz or 115g, freshly grated
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 12 slices regular cut bacon halved crosswise
  • 2 tablespoons fresh chives or green onion, chopped, for garnish

Instructions
 

  • Wearing gloves, slice each jalapeño in half lengthwise and remove all seeds and white membranes with a small spoon or corer. Rinse and pat completely dry with paper towels.
  • In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, smoked paprika, and salt. Stir until smooth and evenly combined.
  • Transfer the filling to a piping bag or zip top bag with the corner snipped off. Pipe or spoon the mixture into each jalapeño half, filling just to the top and pressing down gently.
  • Take one half slice of bacon and wrap it around a filled jalapeño half, spiraling from end to end. Secure with a toothpick pushed through the final end into the pepper flesh. Repeat with remaining poppers.
  • Preheat air fryer to 380°F (193°C) for 3 minutes. Lightly spray the basket with cooking spray and arrange poppers in a single layer, cheese side up, leaving space between each.
  • Air fry at 380°F (193°C) for 12-14 minutes. Flip carefully with tongs around the 8-minute mark for even crisping. Cook until bacon is deeply golden and filling is bubbling at the edges.
  • Remove poppers from air fryer and let rest for 2-3 minutes. Remove toothpicks if desired, garnish with chopped chives or green onion, and serve warm.

Notes

  • Jalapeño heat: Removing the seeds and white membranes removes most of the heat. Leave some membrane intact for spicier poppers or use mini sweet peppers for a heat-free version.
  • Bacon selection: Use regular cut bacon, not thick cut. Thick bacon takes longer to crisp and the jalapeño may overcook before the bacon is done.
  • Don't skip the toothpicks: They keep the bacon tightly wrapped and prevent the cheese from leaking into the air fryer basket.
  • Softened cream cheese: Let cream cheese come to room temperature for the smoothest, lump-free filling.
  • Avoid overcrowding: Cook in batches if needed. Poppers packed too tightly will steam instead of crisp.
  • Make ahead: Assemble poppers up to a day in advance, store covered in the refrigerator, and air fry just before serving.
  • Storage and reheating: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat at 350°F (177°C) for 4-5 minutes in the air fryer to restore crispiness.
  • Freezing: Freeze assembled but uncooked poppers on a tray until solid, then transfer to a freezer bag for up to 2 months. Cook from frozen at 360°F (182°C) for 16-18 minutes, flipping halfway.
  • Cheese variations: Swap cheddar for pepper jack, Monterey Jack, or smoked gouda for different flavor profiles.
