Instructions
Cook bacon until crisp, about 6 to 8 minutes, then crumble. Finely dice bell pepper and slice green onion. Grease silicone mold wells generously with cooking spray, including the sides.
Preheat air fryer to 325°F (165°C) for about 3 minutes. This ensures even cooking from the start.
In a medium bowl, whisk eggs, milk, salt, pepper, and garlic powder for about 30 seconds until smooth, pale yellow, and free of white streaks. Do not overbeat.
Divide bacon, bell pepper, and cheddar evenly among greased wells, reserving a pinch of cheese and green onion for topping. Pour egg mixture over fillings, filling each cup about three-quarters full. Gently shake mold to distribute ingredients.
Place filled mold into air fryer basket, keeping it level. Air fry at 325°F for 12 to 15 minutes, checking at 12 minutes. Bites are done when centers are set, no longer jiggly, and a toothpick comes out clean.
Let egg bites rest in mold for 5 minutes to firm up. Run a small spatula or butter knife around each edge to loosen, then pop them out. Sprinkle reserved green onion and cheese on top. Serve warm or cool completely for storage.
