Instructions
Lightly coat a 6 inch round cake pan with nonstick cooking spray, covering the bottom and sides completely. Preheat your air fryer to 320°F for about 3 minutes. Set the pan aside.
If bacon is not pre-cooked, place it in the air fryer basket at 370°F for 8-10 minutes, flipping halfway, until crisp. Add onion to the basket for the last 2 minutes to soften. Cool slightly, then crumble the bacon.
In a mixing bowl, whisk the eggs, milk, and heavy cream vigorously for about 30 seconds until smooth, pale yellow, and slightly frothy. Stir in salt, pepper, and nutmeg until combined.
Scatter chopped spinach evenly across the bottom of the prepared pan. Top with crumbled bacon and onion. Sprinkle about 3/4 of the shredded cheese over the fillings.
Slowly pour the egg custard mixture over the layered fillings, ensuring even coverage. Sprinkle remaining cheese over the top. Place the pan in the air fryer basket and cook at 320°F for 15-18 minutes.
