Equipment

  • Air fryer Large capacity basket, fits turkey legs in single layer
  • Mixing bowl For spice rub
  • Tongs For flipping turkey legs
  • Instant-read meat thermometer Essential for doneness
  • Oil Mister Spray Bottle Optional, for even oil coating
  • Basting brush Optional, for spreading oil under skin

Ingredients

  • 4 turkey legs (drumsticks) about 12 to 14 ounces (340-400g) each, thawed
  • 2 tablespoons olive oil or melted butter (30ml)
  • 1 tablespoon smoked paprika 15ml
  • 1 tablespoon garlic powder 15ml
  • 1 teaspoon onion powder 5ml
  • 1 teaspoon dried rosemary 5ml, crushed
  • 1 teaspoon kosher salt 5ml
  • 0.5 teaspoon black pepper 2.5ml
  • 1 teaspoon brown sugar 5ml, optional, for caramelized finish

Instructions

  • Pat turkey legs completely dry with paper towels. Trim excess skin flaps if needed. Let sit at room temperature for 10 minutes.
  • Combine smoked paprika, garlic powder, onion powder, rosemary, salt, pepper, and brown sugar in a small bowl. Stir until no lumps remain.
  • Brush oil all over each leg. Gently loosen skin and rub a little oil underneath. Sprinkle seasoning generously over all sides, pressing to adhere.
  • Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  • Arrange legs in a single layer with space between each. Air fry at 375°F (190°C) for 15 minutes, flip, then cook 12-15 minutes more.
  • Check internal temperature reaches 165°F (74°C) in thickest part. If needed, cook 3-5 minutes more. Rest 5 minutes before serving.

Notes

  • Pat Skin Dry: Thoroughly drying the skin is essential—moisture prevents crispy skin.
  • Don't Overcrowd: Leave space between legs for proper air circulation; cook in batches if needed.
  • Flip Halfway: Turning the legs ensures even crisping on both sides.
  • Use a Thermometer: Leg size varies, so rely on internal temperature (165°F/74°C) rather than time alone.
  • Browning Too Fast? If skin darkens before meat is done, reduce temperature slightly for remaining time.
  • Variation - Cajun: Swap rub for a spicy Cajun seasoning blend.
  • Variation - Honey Garlic: Brush with honey garlic glaze during last 5 minutes of cooking.
  • Storage: Refrigerate cooled legs in airtight container for up to 4 days. Freeze wrapped tightly for up to 3 months.
  • Reheating: Reheat in air fryer at 350°F (175°C) for 6-8 minutes to restore crispiness. Avoid microwave.
  • Make Ahead: Season legs up to 24 hours in advance and refrigerate; bring to room temp before cooking.
