Ingredients
  

For the Mocktail

  • 1 cup fresh apple cider 240ml; chilled; fresh-pressed or unfiltered preferred
  • 1 cup ginger beer 240ml; chilled; or substitute plain sparkling water for a lighter version
  • 1 tablespoon fresh lemon juice about 15ml; from approximately half a lemon
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg optional; adds extra warmth
  • 2 tablespoons pure maple syrup or substitute honey; adjust to taste
  • ice cubes as needed; large ice cube molds recommended to slow dilution

Optional Cinnamon Sugar Rim

  • 2 tablespoons granulated sugar for rim coating
  • 1/2 teaspoon ground cinnamon for rim coating; mix with sugar
  • lemon wedge for moistening the rim before dipping in cinnamon sugar

For Garnish

  • fresh apple slices optional; use a crisp variety like Honeycrisp or Fuji; slice thin and cut halfway through to balance on glass rim
  • cinnamon sticks optional; 1 per glass; for stirring and visual appeal
  • fresh rosemary sprigs optional; 1 per glass; for an aromatic garnish

Instructions
 

  • Mix 2 tablespoons of granulated sugar with 1/2 teaspoon of ground cinnamon in a small shallow bowl. Run a lemon wedge around the rim of each glass, then dip and rotate the rim in the cinnamon sugar until evenly coated.
  • In a measuring cup or small pitcher, stir together the apple cider, fresh lemon juice, maple syrup, ground cinnamon, and nutmeg (if using) until the sweetener is fully dissolved and spices are evenly distributed.
  • Add ice cubes to each prepared glass, filling about halfway. Large ice cubes are ideal for keeping the drink cold without diluting it too quickly.
  • Divide the apple cider base evenly between both glasses, pouring slowly over the ice. Aim for about half a cup per glass.
  • Tilt each glass slightly and pour the chilled ginger beer slowly down the inside edge to preserve the carbonation, filling the glass nearly to the top. Give one gentle stir to barely combine.
  • Add a thin apple slice to the rim, tuck in a cinnamon stick, and add a rosemary sprig if desired. Serve immediately while the drink is cold and fizzy.

Notes

  • Use fresh-pressed, unfiltered apple cider for the richest, most complex apple flavor — the cloudy variety is far superior to clear filtered juice.
  • Always add the ginger beer or sparkling water last and pour slowly down the inside edge of the glass to preserve carbonation and avoid overflow.
  • Chill both the apple cider and ginger beer thoroughly before making the drink — cold ingredients plus ice keeps the mocktail refreshing longer.
  • The apple cider base (cider, lemon juice, maple syrup, and spices) can be made up to 24 hours in advance and stored covered in the refrigerator. Always add the carbonated element right before serving.
  • For a lighter version, substitute plain sparkling water or lemon-lime sparkling water in place of ginger beer. This is also the best option for young children who may find ginger beer too spicy.
  • To make a big batch for parties, multiply the base ingredients by the number of servings needed and store in a pitcher in the fridge. Set out the ginger beer so guests can add their own fizz.
  • Prevent apple garnish slices from browning by storing pre-cut slices in a small bowl of water with a squeeze of lemon juice. They'll stay fresh in the fridge for up to 4 hours.
  • Try the Cranberry Apple Fizz variation: replace half the apple cider with 100% cranberry juice for a tart, beautifully colored holiday version.
