  • 1 ½ cups heavy whipping cream cold
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F and set a rack in the center position.
  • Pulse saltines and sugar in a food processor until they form coarse sand. Add melted butter and pulse until mixture resembles wet sand.
  • Press the crust mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Bake for 10-12 minutes until golden and fragrant. Cool slightly on a wire rack, leaving the oven on.
  • Whisk egg yolks until pale and thickened, then whisk in sweetened condensed milk until smooth. Add lemon juice and zest, and whisk until the mixture thickens slightly.
  • Pour the filling into the warm crust and bake for 13-15 minutes until the edges are set but the center has a slight jiggle. Cool at room temperature for 30 minutes.
  • Refrigerate the pie for at least 2 hours, or up to 1 day, until fully set.
  • Beat cold heavy cream, powdered sugar, and vanilla with a hand mixer until soft to medium peaks form.
  • Spread or pipe the whipped cream over the chilled pie. Garnish with extra lemon zest and a sprinkle of flaky sea salt. Slice and serve chilled.

  • Key to the perfect crust: Press the crumbs very firmly into the pie plate using a measuring cup to ensure it holds together when sliced.
  • Fresh lemon juice is crucial: Bottled juice works in a pinch, but freshly squeezed lemons provide the brightest, most authentic flavor.
