Equipment

  • Medium mixing bowl
  • Whisk or fork
  • Measuring cups and spoons
  • Rubber spatula
  • Airtight container or jar For storage

Ingredients

  • 1 cup mayonnaise 240ml
  • 3 tablespoons ketchup 45ml
  • 2 tablespoons sweet pickle relish 30ml
  • 1 tablespoon yellow mustard 15ml
  • 1 tablespoon white vinegar 15ml
  • 1 teaspoon Worcestershire sauce 5ml
  • 1 teaspoon garlic powder 5ml
  • 1 teaspoon onion powder 5ml
  • 1/2 teaspoon paprika 2.5ml
  • 1/4 teaspoon cayenne pepper 1.25ml, optional
  • salt to taste
  • black pepper to taste

Instructions

  • Pull out all ingredients and measure them precisely. Bring mayonnaise to room temperature if refrigerated for easier blending.
  • Add mayonnaise to mixing bowl, then add ketchup, sweet pickle relish (draining excess brine), and yellow mustard.
  • Drizzle in white vinegar and Worcestershire sauce, then sprinkle in garlic powder, onion powder, paprika, and cayenne pepper if using.
  • Whisk with smooth circular motions for at least 30 seconds until completely smooth with no streaks visible. Scrape down sides with spatula.
  • Taste and adjust seasonings as needed, adding more vinegar for tang, ketchup for sweetness, or cayenne for heat. Season with salt and pepper to taste.
  • Transfer to airtight container and refrigerate for at least 30 minutes before serving. For best results, make a few hours ahead or the day before.

Notes

  • Use quality mayonnaise as it makes up the bulk of the sauce and significantly affects the final flavor and richness.
  • If sauce is too thick, thin it with a teaspoon of pickle juice rather than more vinegar for better flavor balance.
  • The sauce tastes significantly better after chilling for at least an hour as the flavors meld together.
  • Let cold ingredients warm up slightly before mixing for a smoother, more emulsified sauce.
  • Don't skip the Worcestershire sauce - it adds essential savory depth that you'll notice if missing.
  • Store in an airtight container for up to 2 weeks in the refrigerator. Always use clean utensils to prevent contamination.
  • This sauce actually improves with time, so making it a day ahead is ideal for maximum flavor development.
  • If sauce separates slightly during storage, simply stir it back together before using.
  • For a spicier version, double the cayenne and add a tablespoon of sriracha or your favorite hot sauce.
  • Works beautifully as a dipping sauce for fries, onion rings, chicken tenders, and even vegetables.
