Flatten each half into a 1-inch thick disk, wrap tightly in plastic wrap, and refrigerate for at least 1 hour or up to 2 days.
On a floured surface, roll one disk into a 12-inch circle about 1/8 inch thick, rotating frequently to keep it even. Transfer to a 9-inch pie dish, pressing gently without stretching, and trim the excess to a 1-inch overhang.
