Ingredients
  

  • 3 tablespoons unsalted butter
  • 1 small yellow onion about 1 cup or 150g, diced
  • 2 large carrots about 1 cup or 130g, peeled and diced
  • 2 stalks celery about 1 cup or 100g, diced
  • 2 cloves garlic minced
  • 1/3 cup all purpose flour about 42g
  • 2 1/2 cups low sodium chicken broth 590ml, good quality recommended
  • 1 cup whole milk 240ml
  • 3 cups cooked chicken about 450g, shredded or diced, rotisserie chicken works well
  • 1 cup frozen peas about 130g, no need to thaw
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon poultry seasoning
  • salt to taste
  • black pepper to taste
  • 1 tablespoon fresh parsley about 5g, chopped, for garnish

Instructions
 

  • Melt butter in a large Dutch oven over medium heat. Add onion, carrots, and celery and cook for 6-8 minutes until softened. Add garlic and cook 30 seconds until fragrant.
  • Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to cook off the raw flour taste until thick and slightly golden.
  • Slowly pour in chicken broth while whisking constantly, then add milk and continue whisking until smooth. Simmer for 5-7 minutes until thickened to coat the back of a spoon.
  • Stir in dried thyme, poultry seasoning, salt, and pepper to taste. Simmer for another minute to let the seasonings bloom.
  • Fold in the cooked chicken and frozen peas, stirring gently. Simmer for 3-5 more minutes until heated through and peas are bright green.
  • Adjust seasoning to taste, remove from heat, and sprinkle with fresh parsley before serving.
