Instructions
Set your oven to 325°F (165°C). Line two baking sheets with parchment paper, making sure the paper lays flat and covers the entire surface.
In a large mixing bowl, combine the shredded coconut, sugar, flour, and salt. Whisk them together until everything is evenly distributed.
Pour in the egg whites, vanilla extract, and almond extract. Stir everything together with a whisk or spatula until the coconut mixture is completely coated and sticky.
Using a cookie scoop or two spoons, portion out the mixture into mounds about 1.5 inches in diameter. Place them on your prepared baking sheets, spacing them about 2 inches apart, and gently press down on each mound to compact it slightly.
Bake for 18-20 minutes until the edges and tops turn golden brown, rotating the baking sheets halfway through for even browning. Let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Chop the chocolate into small, even pieces. Melt using a double boiler over simmering water or in the microwave in 30-second intervals, stirring between each, until fully melted and smooth.
Once the macaroons are completely cool, dip the bottom of each one into the melted chocolate. Place the dipped macaroons back on parchment paper and let the chocolate set at room temperature or in the refrigerator for faster results.
Notes
Use fresh coconut - Stale coconut won't have the same flavor or texture, so check the date on the package.
Don't skip the parchment paper - These cookies stick easily, and parchment makes all the difference.
Compact the mounds - Press the coconut mixture together firmly so the macaroons hold their shape.
Watch the baking time closely - Overbaking will make them dry, so pull them out as soon as the edges turn golden.
Let them cool completely before dipping - Warm macaroons will melt the chocolate and make a mess.
Use high-quality chocolate - It melts better and tastes infinitely better than cheap chocolate chips.
Store in an airtight container - This keeps them fresh and prevents the chocolate from blooming.
If your macaroons spread too much during baking, your mixture might be too wet. Next time, add an extra tablespoon of flour to help them hold their shape.
Make ahead: Bake up to 3 days in advance and store in an airtight container. Wait to dip in chocolate until the day you plan to serve them for the freshest appearance.
For unsweetened coconut, increase sugar to about 1 cup and add an extra egg white to keep the mixture moist enough to hold together.
