Ingredients
  

  • 2 pounds beef chuck stewing steak about 900g, cut into 1-inch cubes
  • 3 tablespoons all purpose flour
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 2 large yellow onions diced
  • 3 cloves garlic minced
  • 2 cups beef stock 475ml
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 2 bay leaves
  • 1 teaspoon salt plus more to taste
  • 1/2 teaspoon black pepper
  • 1 sheet puff pastry thawed (about 8 oz or 225g)
  • 1 egg beaten, for egg wash

Instructions
 

  • Pat beef cubes completely dry, season generously with salt and pepper, then toss with flour until lightly coated, shaking off excess.
  • Heat oil in a Dutch oven over medium-high heat until shimmering. Brown beef in a single layer, working in batches, for 2-3 minutes per side until deeply browned. Transfer to a plate and set aside.
  • Reduce heat to medium, melt butter in the same pot, scraping up browned bits. Add onions and cook 6-8 minutes until softened and lightly golden. Stir in garlic and cook 1 minute until fragrant.
  • Return beef and juices to the pot. Add stock, Worcestershire sauce, thyme, and bay leaves. Bring to a gentle simmer, cover, reduce heat to low, and cook 1 hour 45 minutes to 2 hours until beef is fork-tender and gravy thickens. Remove bay leaves and adjust seasoning.
  • Let filling cool for 15 minutes while preheating oven to 400°F (200°C).
  • Pour cooled filling into pie dish and spread evenly. Roll out puff pastry if needed to fit dish, lay over filling, trim excess overhang, and press edges to seal. Cut 2-3 small slits in the top for steam to escape.
  • Brush the entire pastry top evenly with beaten egg. Place pie on a baking sheet and bake for 25-30 minutes until puffed and deeply golden brown.
  • Remove from oven and let rest for 10 minutes before slicing to allow gravy to settle so slices hold together neatly.

Notes

  • Don't rush the browning: Deep color on the beef builds real flavor in the gravy, so take your time with this step.
  • Keep the pot covered: Check occasionally and add a splash more stock if the gravy reduces too quickly.
  • Always cool the filling: Let the filling cool for about 15 minutes before topping with pastry to avoid a soggy bottom.
  • Use cold puff pastry: Keep the puff pastry in the fridge until ready to use for the best rise and flakiest texture.
  • Rest the pie: Let the finished pie rest for 10 minutes before cutting so the filling doesn't run out.
  • Make ahead: The filling can be made up to 2 days in advance and refrigerated. The flavor often improves after a day.
  • Freezing: Freeze the baked pie tightly wrapped for up to 2 months. Thaw overnight in the refrigerator before reheating in the oven.
