It is a dark, roux-based soup built on tender crawfish tails, a deeply savory stock, and little stuffed crawfish dumplings called boulettes that soak up every bit of that Cajun flavor. This recipe walks you through the whole process step by step, so even if you have never worked with a roux before, you will end up with a pot of bisque that tastes like it came straight out of a New Orleans kitchen.

Ingredients
  

  • 1 pound crawfish tail meat cooked, finely chopped
  • 1 cup plain breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup yellow onion finely minced
  • 1/4 cup celery finely minced
  • 1/4 cup green bell pepper finely minced
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour for dredging
  • 1/2 cup vegetable oil for frying; or cooking spray if baking

For the Bisque

  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 large yellow onion diced
  • 1 cup celery diced
  • 1 green bell pepper diced
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 8 cups crawfish or seafood stock
  • 1.5 pounds crawfish tail meat reserved from the tails above
  • 1 bay leaf
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon cayenne pepper or to taste
  • 1/4 cup green onions sliced
  • 2 tablespoons fresh parsley chopped
  • Salt and black pepper to taste
  • Cooked white rice for serving

Instructions
 

  • Divide crawfish tail meat into two portions: 1 pound for boulettes and 1.5 pounds for the bisque. Finely chop the 1 pound portion for the boulettes. Dice the onion, celery, and bell pepper for the bisque, and mince them separately for the boulettes. Mince garlic and set aside in two bowls. Slice green onions and chop parsley.
  • In a large mixing bowl, combine finely chopped crawfish, breadcrumbs, beaten eggs, minced onion, celery, bell pepper, garlic, parsley, Creole seasoning, cayenne pepper, salt, and black pepper. Mix until it holds together. Cover and refrigerate for at least 20 minutes to firm up.
  • Scoop chilled mixture into tablespoon-sized portions and roll into balls. Dredge each boulette lightly in flour. To fry: heat oil in a skillet over medium heat and cook for 3-4 minutes per side until golden brown. To bake: place on a lined baking sheet, mist with cooking spray, and bake at 375°F for 18-20 minutes, turning once. Set aside.
  • Melt butter in a Dutch oven over medium heat. Whisk in flour a little at a time until smooth. Reduce heat slightly and stir constantly with a wooden spoon for 20-25 minutes until the roux turns a deep reddish brown, like milk chocolate. Watch closely near the end.
  • Add diced onion, celery, and bell pepper to the hot roux and cook, stirring often, for 5-6 minutes until softened. Stir in minced garlic and tomato paste and cook for 1 more minute. Slowly pour in the stock while whisking constantly to prevent lumps. Add bay leaf, Creole seasoning, and cayenne pepper. Bring to a gentle boil.
  • Reduce heat to low and simmer uncovered for 20 minutes. Gently lower the cooked boulettes into the bisque and simmer for another 20-25 minutes, stirring occasionally. The bisque should thicken and coat the back of a spoon.
  • Stir in the remaining 1.5 pounds of crawfish tail meat and cook for 5-7 minutes to warm through. Remove and discard the bay leaf. Stir in sliced green onions and chopped parsley. Taste and adjust salt, black pepper, and cayenne pepper as needed.
  • Spoon cooked white rice into each bowl. Ladle the hot bisque generously over the rice, making sure each bowl gets a few boulettes. Garnish with extra green onions or parsley if desired. Serve immediately.

Notes

  • Never walk away from the roux — it can burn in seconds once it starts to darken.
  • Use a heavy pot so the heat stays even and the roux does not scorch in hot spots.
  • Chill the boulette mixture before shaping so it holds together instead of falling apart.
  • Add the stock gradually while whisking to avoid a lumpy bisque.
  • Taste and season at the very end, since stock and seasoning blends can already carry salt.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze in freezer-safe containers for up to 3 months, leaving a little room for expansion.
  • Thaw frozen bisque overnight in the refrigerator before reheating. Reheat gently on the stovetop over low heat, stirring often.
  • Avoid boiling the bisque hard when reheating, since this can toughen the crawfish.
  • For a smoother bisque, blend a portion of the vegetables into the stock before adding the crawfish tails.
