Instructions
Rinse lentils under cold water and remove any debris. Peel and cube sweet potatoes into ¾-inch pieces. Dice onion, slice carrots, chop celery, and mince garlic.
Add onion, carrots, and celery to the bottom of the slow cooker. Top with garlic, then layer in rinsed lentils and sweet potato cubes. Pour diced tomatoes with juices over the vegetables.
Pour vegetable broth over all ingredients until submerged. Sprinkle cumin, smoked paprika, coriander, turmeric, and cayenne evenly on top. Tuck in bay leaves, season with salt and pepper, and stir gently.
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. Avoid lifting the lid during cooking. Stew is ready when lentils are tender and sweet potatoes are fork-tender.
About 10 minutes before serving, stir in spinach or kale and let wilt. Remove bay leaves, stir in lemon juice, and adjust seasoning with salt, pepper, or more lemon juice.
Ladle hot stew into bowls. Garnish with fresh cilantro or parsley and drizzle with olive oil if desired. Serve immediately with crusty bread or over cooked grains.
Notes
Don't skip rinsing the lentils: This removes excess starch and any debris that could make your stew cloudy.
Cut vegetables uniformly: Same-sized pieces ensure everything cooks at the same rate.
Use low-sodium broth: You can always add salt, but you can't take it away.
Avoid red lentils: They break down too much in the slow cooker; stick with green or brown varieties.
Add acidic ingredients at the end: Lemon juice added too early can prevent lentils from softening properly.
Layer thoughtfully: Harder vegetables near the bottom cook more evenly.
Don't overfill your slow cooker: Keep it no more than two-thirds full for proper heat circulation.
Test doneness: Lentils should be tender but not mushy, and sweet potatoes should be fork-tender.
Storage: Cool completely, transfer to airtight containers, and refrigerate up to 5 days or freeze up to 3 months.
Reheating: Reheat on stovetop over medium heat, stirring occasionally, until heated through. Add a splash of broth if thickened.
