Instructions
Dice the onion, carrots, and celery into ¼-inch pieces. Mince the garlic, dice potatoes into ½-inch cubes, cut green beans into 1-inch pieces, and drain and rinse both cans of beans.
Heat olive oil in a large Dutch oven over medium heat. Add onion, carrots, celery, and a pinch of salt. Cook 7-10 minutes until softened, then stir in tomato paste for 1-2 minutes. Add garlic and dried herbs, cooking 1 minute until fragrant.
Pour in crushed tomatoes and scrape up any browned bits. Add vegetable broth, bay leaves, and diced potatoes. Bring to a boil over medium-high heat.
Reduce heat to medium-low to maintain a gentle simmer. Add both types of beans and green beans. Cover partially and simmer 15-20 minutes until potatoes are fork-tender.
Stir in pasta and cook uncovered for 8-10 minutes until al dente, stirring occasionally. Add extra broth or water if soup becomes too thick.
Stir in chopped spinach and cook 1-2 minutes until wilted. Remove bay leaves. Taste and season generously with salt and black pepper.
