Instructions
In a large mixing bowl, whisk together rolled oats, chia seeds, cinnamon, nutmeg, and salt until the spices are evenly distributed.
Pour in the eggnog, milk, maple syrup, and vanilla extract. Stir thoroughly until all oats are completely coated and no dry clumps remain.
Divide the mixture evenly among four mason jars, filling each about three-quarters full. Give each jar a quick stir to prevent chia seeds from settling.
Seal the lids tightly and refrigerate for at least 8 hours, preferably overnight, to allow the oats and chia seeds to soften and absorb the liquid.
In the morning, stir the oats and add a splash of milk or eggnog if a thinner consistency is desired. Top with your favorite toppings and enjoy cold or warmed.
Notes
Use full-fat eggnog for the richest, creamiest flavor and texture.
Don't skip the chia seeds—they create the pudding-like consistency and add protein and fiber.
Adjust the liquid ratio to your preference: add more milk or eggnog for looser oats, or more oats for thicker oats.
Taste your eggnog before adding extra spices, as some brands are already heavily spiced.
Prep multiple jars at once—these keep beautifully for up to 5 days in the fridge.
Toast nuts before using as a topping to bring out their flavor and add crunch.
Experiment with different toppings each day to keep breakfast interesting all week.
Store without toppings for the longest shelf life; add fresh fruit, nuts, and whipped cream right before eating.
To reheat, remove lid and microwave on 50% power for 30-45 seconds, stir, and heat another 15-30 seconds if needed.
Freezing is not recommended—the texture becomes grainy and separated when thawed.
