This fresh peach salsa comes together in just 15 minutes with no cooking required. Sweet ripe peaches, spicy jalapeno, bright lime juice, and fresh cilantro create a versatile salsa that works as a dip with tortilla chips or a topping for grilled chicken, fish, and tacos.
1cupcherry tomatoesquartereed, or 2 Roma tomatoes diced
1/2cupred onionfinely diced
1jalapenoseeded and finely diced
2clovesgarlicminced
1/3cupfresh cilantrochopped
2tablespoonsfresh lime juice
1/2teaspoonsalt
1/4teaspoonblack pepper
1tablespoonraw honeyoptional, for peaches that are on the tart side
Instructions
Rinse and dry the peaches. Cut each in half, remove the pit, and dice into 1/4-inch pieces. Add to a large mixing bowl. Leave the skin on for color and texture, or peel if desired.
Quarter the cherry tomatoes and finely dice the red onion. Slice the jalapeno in half, remove seeds and membrane, then dice finely. Add all to the bowl with the peaches.
Mince the garlic finely and roughly chop the cilantro, including tender stems. Add both to the bowl.
Squeeze fresh lime juice over the mixture. Sprinkle with salt and black pepper. Add the optional honey if your peaches are tart.
Gently fold everything together until evenly combined. Taste and adjust salt, lime juice, or jalapeno to your preference. Let rest for at least 15 minutes for flavors to mingle.
Stir gently before serving as some liquid may pool at the bottom. Serve with tortilla chips or spoon over grilled chicken, fish, or tacos.
Notes
Use peaches that give slightly when pressed for the best sweetness and juiciness. Underripe peaches will lack flavor.
Dice all ingredients to a similar size so each spoonful has a balanced combination of flavors.
Taste as you go since peach sweetness varies. Adjust lime, salt, or honey accordingly.
For more heat, leave some jalapeno seeds in or add a second pepper. For a milder salsa, remove all seeds and membranes.
