Instructions
Brown the ground beef and diced onion in a large skillet or Dutch oven over medium-high heat for 6-8 minutes until beef is no longer pink and onion has softened. Drain excess grease.
Stir in minced garlic and cook until fragrant, about 1 minute. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper, and cook for another minute to toast the spices.
Stir in tomato paste until fully incorporated. Add diced tomatoes, diced tomatoes with green chilies, beef broth, and drained pinto beans. Bring to a simmer, reduce heat to low, and cook uncovered for 15-20 minutes until thickened.
Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
Spread two-thirds of the Fritos evenly across the bottom of the baking dish, pressing gently to form a compact layer. Reserve the remaining chips for topping.
Taste the chili and adjust salt if needed. Spoon the hot chili evenly over the Fritos, then sprinkle with cheddar and Monterey Jack cheese.
Scatter the reserved Fritos over the cheese layer. Bake uncovered for 12-15 minutes until cheese is melted and bubbling. Watch closely so the top chips don't burn.

Notes
Do not skip draining the beef if it looks greasy, since excess fat can make the chips soggy faster.
