Equipment

  • Medium saucepan sturdy with heavy base for even heating
  • Candy thermometer essential for monitoring caramel temperature
  • Wooden spoon
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Wooden sticks or lollipop sticks 6 sticks

Ingredients

  • 6 medium apples firm, crisp varieties like Granny Smith or Honeycrisp
  • 1 cup granulated sugar 200g
  • 1/2 cup heavy cream 120ml
  • 1/4 cup butter 57g
  • 1/4 cup light corn syrup 60ml
  • 1 tsp vanilla extract high-quality recommended
  • chopped nuts or sprinkles optional, for topping

Instructions

  • Wash and dry apples thoroughly to remove wax and moisture. Remove stems, push wooden sticks halfway into each apple, and place on a parchment-lined baking sheet in the fridge to chill.
  • Combine sugar, heavy cream, butter, and corn syrup in a medium saucepan over medium heat. Stir constantly until butter melts and mixture is smooth, then stop stirring once it bubbles.
  • Clip a candy thermometer to the pan and cook until the caramel reaches 245°F (firm-ball stage), about 10-15 minutes. Remove from heat and stir in vanilla extract.
  • Let caramel cool for 2-3 minutes until thickened but pourable. Dip each chilled apple by the stick, tilting the pan to coat evenly and leaving about an inch uncovered near the stick. Twirl to let excess drip back into the pan.
  • If using toppings, sprinkle or roll each dipped apple in nuts or sprinkles immediately while caramel is still tacky. Work quickly as caramel sets fast.
  • Place dipped apples on the parchment-lined baking sheet and let sit at room temperature for about 30 minutes until caramel is fully set. In warm climates, refrigerate for 15-20 minutes to speed up setting.

Notes

  • Use firm, crisp apples like Granny Smith or Honeycrisp for the best texture and to balance the sweet caramel.
  • Make sure apples are completely dry before dipping — any moisture or wax will cause the caramel to slide off.
  • Chill the apples while making the caramel; cold apples help the coating stick and set faster.
  • Monitor caramel temperature closely with a candy thermometer to avoid burning — caramel goes from perfect to burnt in minutes.
  • Stop stirring once the mixture begins to bubble to prevent crystallization and grainy caramel.
  • If the caramel gets too thick while dipping, gently reheat over low heat to restore dipping consistency.
  • Store caramel apples in an airtight container in the refrigerator for up to 2 weeks, wrapped individually in parchment paper to prevent sticking.
  • Avoid freezing caramel apples, as the apples can become mushy.
  • If caramel hardens too much in the fridge, let apples sit at room temperature for 15-20 minutes before serving. Reheating is not recommended.
  • To clean the pot, fill with water and bring to a boil to dissolve leftover caramel, then wash as usual.
