This Mango Lime Spritzer is a bright, tropical refreshment that combines naturally sweet mango puree with tangy fresh lime juice and effervescent sparkling water. Ingredients
Spritzer Base
2cupsfresh mango chunksabout 475ml or 2 medium mangoes, peeled and pitted
1/4cupfresh lime juiceabout 60ml, from 2-3 limes

Instructions
Wash mangoes, slice off both cheeks on either side of the pit, score the flesh in a crosshatch pattern, and cut off the cubed pieces. Measure out 2 cups of mango chunks.
Roll each lime firmly on the counter to release more juice, then cut in half and juice using a citrus reamer or juicer. Measure out 1/4 cup of fresh lime juice.
Add mango chunks, lime juice, and honey or agave to a blender and blend on high for 45–60 seconds until completely smooth. Taste and adjust sweetener as needed.
For an ultra-smooth texture, pour the blended mixture through a fine mesh strainer, pressing with the back of a spoon to push it through. Discard any fibrous solids.
Pour the mango-lime base into a large pitcher, then slowly add the cold sparkling water and stir very gently to preserve carbonation. Add a few ice cubes to keep it cold.
Fill 4 tall glasses with ice, then garnish each with a lime slice on the rim, a sprig of fresh mint, and a few mango chunks if desired.
Give the pitcher one final gentle stir, pour the spritzer slowly into each prepared glass, and serve immediately while cold and fizzy.

Choose ripe mangoes that yield slightly when pressed near the stem and smell sweet — underripe mangoes will be tart and fibrous.
Always use freshly squeezed lime juice; bottled juice has a flat, processed flavor that noticeably affects the final drink.
