Ingredients
  

For the Oreo Crust

  • 24 whole cookies Oreo cookies crushed, filling and all
  • 6 tablespoons unsalted butter 85g, melted
  • salt a pinch

For the Caramel Cream Cheese Filling

  • 16 ounces cream cheese 454g, softened
  • 1 cup caramel sauce plus extra for drizzling, use a thick sauce
  • 1 cup powdered sugar 120g
  • 1 teaspoon vanilla extract 5ml
  • 2 cups heavy whipping cream divided, 1 1/2 cups (360ml) for whipping and 1/2 cup (120ml) for ganache

For the Chocolate Ganache and Topping

  • 8 ounces semisweet chocolate chips 227g
  • 1 cup chopped pecans toasted
  • 1 cup whipped cream for topping, optional
  • flaky sea salt for sprinkling, optional

Instructions
 

  • Pulse whole Oreo cookies in a food processor until they form fine crumbs with no large chunks.
  • Mix the cookie crumbs with melted butter and a pinch of salt until it resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch pie dish.
  • Place the pressed crust in the freezer for 15-20 minutes or the refrigerator for 30 minutes to set.
  • Beat softened cream cheese in a large bowl until completely smooth. Add caramel sauce, powdered sugar, and vanilla, and beat until light and fluffy.
  • In a separate bowl, whip 1 1/2 cups of heavy cream until stiff peaks form. Fold gently into the cream cheese mixture to keep it airy.
  • Spoon the caramel cream cheese filling into the chilled crust and smooth the top. Return to the refrigerator.
  • Place chocolate chips in a bowl. Heat the remaining 1/2 cup heavy cream until hot, pour over chips, let stand 2 minutes, then whisk until smooth.
  • Let ganache cool for 5 minutes, then pour evenly over the filling. Tilt the pie dish to spread into an even layer.
  • Cover loosely with plastic wrap and refrigerate for at least 6 hours, or overnight, until fully set.
  • Before serving, top with whipped cream, a drizzle of caramel sauce, and toasted chopped pecans. Optionally sprinkle with flaky sea salt.

Notes

  • Softened cream cheese: Ensure your cream cheese is at room temperature before mixing to avoid lumps in the filling.
  • Thick caramel sauce: Use a thick, high-quality caramel sauce to prevent the filling from becoming too soft to slice.
  • Toast pecans: Toast pecans in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant. This enhances their nutty flavor.
  • Chilling time: Do not rush the chilling time. The full 6 hours (or overnight) is necessary for a clean slice.
  • Clean slices: Dip your knife in hot water and wipe it dry between each cut for neat, beautiful slices.
  • Make ahead: This pie is excellent to make a day in advance. Add fresh toppings like whipped cream and pecans just before serving.
  • Variation: For a frozen treat, freeze the finished pie for 2 hours before serving for an ice cream pie texture.
  • Storage: Store leftovers tightly covered in the refrigerator for up to 4 days. Individual slices can be wrapped and frozen for up to 1 month.
  • Pecan crust version: Swap the Oreo crust for a mixture of crushed pecans, flour, butter, and a little sugar for extra nuttiness.
