Instructions
Pulse whole Oreo cookies in a food processor until they form fine crumbs with no large chunks.
Mix the cookie crumbs with melted butter and a pinch of salt until it resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch pie dish.
Place the pressed crust in the freezer for 15-20 minutes or the refrigerator for 30 minutes to set.
Beat softened cream cheese in a large bowl until completely smooth. Add caramel sauce, powdered sugar, and vanilla, and beat until light and fluffy.
In a separate bowl, whip 1 1/2 cups of heavy cream until stiff peaks form. Fold gently into the cream cheese mixture to keep it airy.
Spoon the caramel cream cheese filling into the chilled crust and smooth the top. Return to the refrigerator.
Place chocolate chips in a bowl. Heat the remaining 1/2 cup heavy cream until hot, pour over chips, let stand 2 minutes, then whisk until smooth.
Let ganache cool for 5 minutes, then pour evenly over the filling. Tilt the pie dish to spread into an even layer.
Cover loosely with plastic wrap and refrigerate for at least 6 hours, or overnight, until fully set.
