Instructions
Bring a small pot of water to a boil, drop in the peaches for 30 seconds, then transfer to ice water. Slip off the skins, halve, pit, and dice into 1/4 inch pieces.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon until evenly distributed.
In a medium bowl, whisk eggs until foamy. Add buttermilk, melted butter, and vanilla, then whisk until fully combined.
Pour wet ingredients into the dry bowl and stir just until no dry streaks remain. A few small lumps are fine.
Gently fold diced peaches into the batter with a light hand. Let the batter rest for 5 minutes while preheating the griddle.
Preheat a griddle or skillet over medium heat and lightly grease with butter. Test by flicking water on the surface; it should sizzle.
Pour 1/4 cup batter per pancake onto the griddle, leaving space between. Cook 2-3 minutes until bubbles form and edges set, then flip and cook 1-2 minutes until golden.
