This Peach Upside-Down Cake Recipe takes everything you love about a classic pineapple upside-down cake and swaps in juicy, caramelized peaches instead. Instructions
Preheat oven to 350°F (175°C). Pour melted butter into a 10-inch cast iron skillet or 9-inch round cake pan, tilting to coat the bottom evenly. Sprinkle brown sugar over the butter and press down with a spoon to form a smooth layer.
Arrange sliced peaches over the brown sugar in a single, slightly overlapping layer, working from the outer edge toward the center. Sprinkle with cinnamon if using.
In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, beat softened butter and granulated sugar with a hand mixer on medium speed for 2-3 minutes until pale and fluffy. Add eggs one at a time, then mix in vanilla.
With mixer on low, add flour mixture in three additions, alternating with milk, starting and ending with flour. Mix just until smooth and no dry streaks remain. Do not overmix.
