Ingredients
  

For the Waffles

  • 2 cups all purpose flour 240g
  • 2 tablespoons granulated sugar 25g
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs separated
  • 1 3/4 cups buttermilk 420ml, room temperature
  • 1/3 cup unsalted butter 75g, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh peaches about 150g, peeled and finely diced

For the Peach Syrup

  • 2 cups fresh peaches about 300g, peeled and sliced
  • 1/4 cup brown sugar 50g, packed
  • 2 tablespoons unsalted butter 28g
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon water
  • 1 teaspoon fresh lemon juice

For Serving (Optional)

  • whipped cream for topping
  • pure maple syrup for drizzling
  • extra fresh peach slices for garnish

Instructions
 

  • Preheat waffle iron and oven to 200°F with a wire rack on a baking sheet inside to keep waffles crisp.
  • Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  • Separate eggs and whip whites with a hand mixer until stiff peaks form, about 2-3 minutes.
  • Whisk egg yolks with buttermilk, melted butter, and vanilla until smooth.
  • Pour wet mixture into dry ingredients and stir gently until just combined, then fold in diced peaches.
  • Fold in whipped egg whites gently using a scoop and fold motion until no white streaks remain.
  • Grease waffle iron and cook batter according to manufacturer instructions until golden and crisp.
  • Melt butter in a saucepan, add peaches, brown sugar, cinnamon, and water, simmer for 5-7 minutes until thickened.
  • Remove syrup from heat, stir in lemon juice, and serve warm over waffles with optional toppings.

Notes

  • Use ripe but firm peaches so they hold their shape in the batter.
  • Always start with room temperature eggs and buttermilk for the fluffiest results.
  • Do not overmix the batter — a few lumps are perfectly fine for tender waffles.
  • Whipping egg whites to stiff peaks is the key to light, crispy waffles.
  • Keep cooked waffles on a wire rack in a warm oven instead of stacking them to prevent sogginess.
  • Resist opening the waffle iron early; let it finish its full cycle for the crispiest result.
  • Frozen peaches work well too — thaw and pat them dry before using.
  • Store leftover waffles in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
  • Reheat waffles in a toaster or toaster oven for the crispiest results.
  • Peach syrup keeps in the fridge for up to 4 days; reheat gently before serving.
