Equipment

  • Mason jars or airtight containers 16 oz size works perfectly
  • Measuring cups and spoons
  • Mixing bowl
  • Whisk or fork
  • Spoon for stirring

Ingredients

  • 1 cup rolled oats old-fashioned oats; 80g
  • 1 cup milk dairy or non-dairy; 240ml
  • 2 tablespoons chia seeds 24g
  • 2 tablespoons cocoa powder unsweetened; 12g
  • 2 tablespoons maple syrup or honey; 30ml
  • 2 tablespoons brewed espresso or strong coffee, cooled; 30ml
  • 1/2 teaspoon peppermint extract 2.5ml
  • 1/4 teaspoon vanilla extract 1.25ml
  • salt pinch

Optional Toppings

  • chocolate chips optional topping
  • crushed candy canes optional topping
  • whipped cream optional topping
  • cacao nibs optional topping

Instructions

  • Add the rolled oats, chia seeds, cocoa powder, and a pinch of salt to a mixing bowl. Whisk thoroughly to break up any cocoa powder clumps and ensure even chocolate distribution.
  • In a separate container, combine the milk, cooled espresso, maple syrup, peppermint extract, and vanilla extract. Whisk until the maple syrup is fully incorporated and the mixture is smooth.
  • Pour the wet ingredients over the dry ingredients and stir thoroughly for at least 30 seconds. Make sure all the oats are submerged in the liquid and scrape down the sides of the bowl.
  • Divide the mixture evenly between two mason jars or airtight containers, leaving about an inch of space at the top. Press down gently with a spoon to remove any air pockets and seal the lids tightly.
  • Place the jars in the refrigerator for at least 6 hours or overnight. For best results, let them sit for 8-12 hours until the oats are creamy and pudding-like.
  • Remove the jars from the refrigerator and stir well. Add a splash of milk if you prefer a thinner consistency, then top with your favorite additions and enjoy cold or warmed.

Notes

  • Use strong coffee – Regular brewed coffee works, but espresso or strong cold brew gives the best mocha flavor.
  • Don't skip the chia seeds – They add thickness, creaminess, and extra nutrition.
  • Start with less peppermint – You can always add more, but you can't take it away.
  • Choose your milk wisely – Full-fat milk creates the creamiest texture, but any milk works.
  • Give it time – The longer the oats sit (up to 3 days), the creamier they become.
  • Stir before eating – The mixture naturally separates a bit, so mixing redistributes everything.
  • Adjust the liquid ratio – If you prefer thicker oats, reduce the milk by 2 tablespoons.
  • Make a big batch – This recipe easily doubles or triples for meal prep.
  • Storage – Keep in airtight containers in the refrigerator for up to 5 days.
  • Freezer storage – You can freeze overnight oats for up to 3 months in freezer-safe containers; thaw in the refrigerator overnight.
