Pepperoni Pizza Bombs wrap flaky biscuit dough around melty mozzarella, zesty pizza sauce, and mini pepperoni, then bake until golden and brush with garlic butter. They come together with a handful of simple ingredients and no dough rising at all, making them the perfect handheld snack for parties, game days, or busy weeknights.

Instructions
Move an oven rack to the center position and preheat your oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper and lightly coat with nonstick cooking spray.
Melt the butter in a small microwave-safe bowl in 15-second bursts until fully liquid. Stir in the minced garlic, Italian seasoning, and salt. Set aside.
Cut the mozzarella block into 16 small cubes, roughly 1/2 inch each. Count out 32 mini pepperoni slices and measure 1/3 cup of pizza sauce into a small bowl.
Open the can of biscuit dough and separate the 8 biscuits. Cut each biscuit in half horizontally to make 16 rounds, then press each half into a flat circle about 3 inches wide.
Spoon 1 teaspoon of pizza sauce into the center of a dough circle, leaving a clean border. Top with 2 mini pepperoni slices and 1 cube of mozzarella. Do not overfill.
Lift the edges of the dough up and over the filling. Pinch the seams tightly together so there are no gaps, then gently roll into a smooth ball. Place seam-side down on the prepared baking sheet, spacing 1 inch apart.
Brush the tops of the bombs with about half of the garlic butter. Bake for 12 to 15 minutes, until the tops are deep golden brown and the dough feels set when pressed lightly. Rotate the pan halfway through baking.
Remove the pan from the oven and immediately brush the bombs with the remaining garlic butter. Sprinkle with freshly grated Parmesan and chopped parsley. Let rest for 5 minutes.
Warm 1 cup of marinara sauce in a small saucepan over medium-low heat for 3 to 4 minutes, stirring occasionally. Serve the pizza bombs with the warm marinara for dipping.
