Equipment

  • 8x8-inch baking pan
  • Parchment paper for easy removal
  • Mixing bowls medium and large
  • Rubber spatula
  • Measuring cups and spoons
  • Wire rack for cooling
  • Butter knife or skewer for swirling
  • Sharp knife for cutting bars

Ingredients

For the Crust

  • 1 1/2 cups graham cracker crumbs about 180g
  • 1/4 cup granulated sugar 50g
  • 6 tablespoons unsalted butter 85g, melted

For the Cheesecake Layer

  • 16 oz cream cheese 455g, softened, full-fat
  • 3/4 cup granulated sugar 150g
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract 5ml

For the Pumpkin Layer

  • 1 cup pumpkin puree 245g, canned or fresh
  • 1/4 cup granulated sugar 50g
  • 1 large egg room temperature
  • 1/2 teaspoon ground cinnamon 1.5g
  • 1/4 teaspoon ground nutmeg 0.5g
  • 1/4 teaspoon ground ginger optional, for extra warmth

For Serving (Optional)

  • powdered sugar for dusting
  • whipped cream for topping
  • ground cinnamon for sprinkling
  • candied pecans for garnish
  • vanilla ice cream for serving

Instructions

  • Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides. In a medium bowl, combine graham cracker crumbs and sugar, then stir in melted butter until the mixture resembles wet sand.
  • Press the crumb mixture firmly into the bottom of the prepared pan using the back of a measuring cup. Bake at 350°F for 8-10 minutes until lightly golden and set. Remove and let cool slightly.
  • In a large mixing bowl, beat softened cream cheese on medium speed until smooth, about 1 minute. Gradually add sugar and beat until incorporated, scraping down the sides as needed.
  • Add eggs one at a time, mixing on low speed just until combined after each addition. Stir in vanilla extract. Avoid overbeating to prevent air bubbles. Pour over the cooled crust and spread evenly.
  • In a separate medium bowl, whisk together pumpkin puree and sugar. Add egg and whisk until smooth. Incorporate cinnamon, nutmeg, and optional ginger, mixing thoroughly without lumps.
  • Gently spoon the pumpkin mixture over the cheesecake layer. Use a butter knife or skewer to swirl the layers lightly for a marbled effect, being careful not to disturb the crust.
  • Bake at 350°F for 35-45 minutes until the center is set but slightly jiggly and edges are lightly browned. Check at 35 minutes; a toothpick inserted in the center should come out mostly clean.
  • Turn off the oven and crack the door, allowing bars to cool inside for 30 minutes to prevent cracking. Transfer to a wire rack to cool completely at room temperature, about 1 hour.
  • Cover the cooled pan with plastic wrap and refrigerate for at least 4 hours or overnight for clean slices. Use parchment overhang to lift bars from pan.
  • Cut into 16 squares with a sharp knife, wiping the blade between cuts. Serve chilled for best texture.

Notes

  • Use full-fat cream cheese for the richest, creamiest texture. Low-fat or whipped versions will alter the consistency.
  • Room temperature ingredients (cream cheese, eggs) ensure smooth blending without lumps.
  • Press the crust firmly into the pan to avoid crumbling when slicing.
  • Swirl the pumpkin layer gently to maintain distinct layers and a beautiful marbled effect.
  • Chill thoroughly—at least 4 hours or overnight—before cutting for neat, clean edges.
  • To prevent cracking, cool the bars gradually in the oven with the door ajar for 30 minutes.
  • For gluten-free bars, substitute graham cracker crumbs with a gluten-free version. The rest of the recipe is naturally gluten-free.
  • Make mini versions in a muffin tin for individual portions; adjust baking time to about 20-25 minutes.
  • Store in an airtight container in the fridge for up to 5 days. Layer with parchment to prevent sticking.
  • Freeze wrapped individually for up to 2 months. Thaw overnight in the fridge before serving. Avoid microwaving to prevent sogginess.
  • Variations: Add chocolate chips to the cheesecake layer, swap graham crackers for gingersnap crumbs, include a streusel topping, or use maple syrup instead of sugar in the pumpkin layer.
