Spoon pumpkin puree onto paper towels and press gently with another paper towel to remove excess moisture.
In a stand mixer, beat softened butter, brown sugar, and granulated sugar on medium speed for 2 minutes until light and fluffy. Scrape down sides as needed.
Add blotted pumpkin puree, egg yolk, and vanilla extract. Beat on low speed until fully combined and smooth.
With mixer on low speed, gradually add dry ingredients to wet ingredients. Mix just until no streaks of flour remain. Do not overmix.
Using a cookie scoop, drop rounded portions of dough onto prepared baking sheets about 2 inches apart. Bake for 10 to 12 minutes until edges are set but centers still look soft.
Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
In a clean mixing bowl, beat softened cream cheese and butter together until smooth and creamy. Add powdered sugar, vanilla extract, and a small pinch of salt. Beat on low then increase to medium until light and fluffy.
Once cookies are completely cool, pair them by similar size. Spread or pipe a generous layer of filling onto the flat side of one cookie, then gently press a second cookie on top to form a sandwich.
