Ingredients
  

  • 2.5 lbs baby potatoes about 1.1kg, halved or quartered if large
  • 14 oz smoked kielbasa sausage about 400g, sliced into 1/2-inch rounds
  • 1/4 cup olive oil 60ml
  • 1 packet ranch seasoning mix 1 oz or 28g packet
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper freshly ground
  • salt to taste

For Serving

  • 2 tablespoons fresh parsley chopped
  • sour cream optional, for topping
  • shredded cheddar cheese optional, for topping

Instructions
 

  • Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine halved potatoes, sliced kielbasa, olive oil, ranch seasoning, garlic powder, onion powder, smoked paprika, black pepper, and salt. Toss until everything is evenly coated.
  • Spread the potato and sausage mixture in a single layer on the prepared baking sheet, ensuring pieces aren't overcrowded for even browning.
  • Bake for 25-30 minutes, stirring halfway through, until potatoes are tender and golden brown with crispy edges.
  • Remove from oven, garnish with fresh parsley, and serve hot with optional sour cream or shredded cheese on top.

Notes

  • For crispier potatoes, make sure they're spread in a single layer without overcrowding the pan. Use two baking sheets if needed.
