Equipment

Ingredients
  

  • 2 oz blanco tequila 60ml; use 100% agave blanco (silver) tequila — look for '100% de agave' on the label
  • 1 oz fresh lime juice 30ml; about 1 large lime, always use fresh-squeezed
  • 12 oz Topo Chico sparkling mineral water 355ml; 1 standard bottle; San Pellegrino is the next best substitute
  • ice cubes Use plenty — fill the glass generously

For the Rim & Garnish (Optional)

  • kosher salt or Tajín seasoning For rimming the glass
  • 1 lime wedge or wheel For rimming the glass and garnish
  • flaky sea salt or Tajín seasoning Optional; for sprinkling on top of the finished drink

Instructions
 

  • Fill a tall highball glass generously with ice cubes. If desired, rub a lime wedge around the rim, then dip the moistened rim into a plate of kosher salt or Tajín seasoning to coat evenly.
  • Roll 1–2 large limes on the counter to loosen the juice, then cut in half and squeeze through a citrus juicer to yield 1 oz (30ml) of fresh lime juice. Strain out any seeds and set aside. Cut a lime wheel or wedge for garnish.
  • Measure 2 oz of 100% agave blanco tequila using a jigger and pour it directly over the ice in your prepared glass.
  • Pour 1 oz of fresh lime juice into the glass over the tequila and ice, then stir gently with a bar spoon for 3–4 slow rotations just to combine.
  • Open a well-chilled bottle of Topo Chico and pour it slowly into the glass at a slight angle to preserve carbonation — fill almost to the top. Do not stir after adding the sparkling water.
  • Place a lime wheel or wedge on the rim of the glass, add a light pinch of Tajín or flaky sea salt on top if desired, and serve immediately while ice cold and fully carbonated.

Notes

  • Always use fresh lime juice. Bottled lime juice is too acidic and lacks brightness — this single swap makes the biggest difference in flavor.
  • 100% agave tequila is non-negotiable. Avoid cheaper mixto tequilas; they make the drink taste harsh and can cause headaches. Look for '100% de agave' on the label.
  • Keep Topo Chico ice cold. Warm sparkling water goes flat quickly. Store bottles in the refrigerator and open only when ready to pour.
  • Don't shake or stir vigorously. Ranch Water is always built directly in the glass — too much agitation kills the carbonation that defines the drink.
  • Pour Topo Chico last and slowly. Tilt the glass slightly as you pour to preserve bubbles and prevent overflow.
  • Make-ahead tip: Pre-mix the tequila and lime juice in a pitcher and refrigerate for up to 24 hours. Add Topo Chico per glass only at the moment of serving.
  • Spicy variation: Add 2–3 thin jalapeño slices to the glass before the ice and muddle gently for a spicy Ranch Water.
  • Best substitutes for Topo Chico: San Pellegrino is the closest alternative for strong carbonation and mineral flavor. Avoid flat or lightly carbonated waters.
  • Scaling for a party: Multiply the tequila and lime juice by the number of guests and store in a sealed pitcher. Pour individual servings over ice and top each glass with a fresh pour of Topo Chico.
  • Mocktail version: Skip the tequila and use a non-alcoholic spirit alternative, or simply double the lime juice and add a generous pinch of salt for a zero-proof Ranch Water.
