1cupwhole milk ricotta cheeseabout 8 oz; do not substitute low-fat
2tablespoonsraw honeyfor the filling
1/2teaspoonpure vanilla extract
1teaspoonlemon zestfrom about 1 small lemon
1small pinchfine salt
1/3cupunsalted shelled pistachios
3tablespoonshoneywarmed, for drizzling
1small pinchflaky sea saltoptional, for finishing
Instructions
Preheat the oven to 350°F (175°C) with a rack in the center. Set a fine-mesh strainer over a medium bowl, add the ricotta, and let it drain for about 10 minutes, pressing gently with a spatula to release excess liquid. Discard the liquid and scrape the ricotta into a clean bowl.
Line a rimmed baking sheet with parchment paper and arrange the phyllo shells on it with a little space between them. Bake straight from the freezer for 4 to 5 minutes, until lightly golden and crisp, then cool completely on the sheet for about 10 minutes.
Toast the pistachios in a small dry skillet over medium-low heat, stirring often for 3 to 4 minutes, until fragrant and slightly deeper in color. Cool for 2 minutes on a cutting board, then chop finely into pieces about the size of small pebbles.
Add the 2 tablespoons honey, vanilla, lemon zest, and fine salt to the drained ricotta. Beat with a hand mixer on medium speed for 60 to 90 seconds until smooth, fluffy, and thick enough to hold a soft peak.
Spoon the filling into a piping bag, twist the top closed, and snip a 1/2-inch opening. Pipe about 2 teaspoons of filling into each cooled shell, mounding it slightly above the rim.
Sprinkle about 1/2 teaspoon chopped pistachios over each bite, pressing lightly. Warm the 3 tablespoons honey in the microwave for 10 to 15 seconds, drizzle in thin lines over the bites, and finish with a tiny pinch of flaky sea salt if using. Serve right away.
Notes
Drain the ricotta well — excess liquid is the number one cause of runny filling and soggy shells.
Use whole milk ricotta for the richest, creamiest filling; part-skim works but will be less creamy and slightly grainy.
Cool the shells completely before filling, since warm shells soften quickly.
Fill within 30 minutes of serving to keep the phyllo crunchy.
Chop the pistachios finely so the pieces sit neatly on top and do not roll off.
Warm the honey gently — a few seconds is enough, as hot honey can melt the filling.
Use a good floral or wildflower honey since honey is a star ingredient here.
Make ahead: store whipped ricotta in the fridge up to 2 days, baked shells at room temperature up to 1 day, and chopped pistachios in a jar up to 3 days.
Variations: drizzle with hot honey, swap lemon zest for orange zest, add a raspberry or fig slice, stir cinnamon into the filling, or use toasted almonds.
Do not freeze assembled bites; the ricotta texture changes. Leftovers keep in a single layer in the fridge up to 1 day, though shells will soften.
