Instructions
Preheat oven to 350°F and grease a 9-inch pie dish. Stir graham cracker crumbs, sugar, and salt together. Pour in melted butter and mix until it resembles wet sand. Press firmly into the bottom and up the sides of the dish.
Bake the crust for 9-10 minutes until set and slightly darker at the edges. Cool completely on a wire rack for 20-30 minutes before adding filling.
Place chocolate chips in a heatproof bowl. Heat heavy cream over medium heat until it just simmers at the edges. Pour hot cream over chocolate and let sit undisturbed for 2 minutes. Whisk until smooth and glossy. Whisk in butter, vanilla, and salt.
Pour ganache into cooled crust and smooth the top. Refrigerate loosely covered for at least 4 hours until fully set and no longer jiggly.
Combine egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water. Whisk constantly until sugar dissolves and mixture reaches 160°F (3-4 minutes). Transfer to a stand mixer and beat on high for 6-8 minutes until stiff, glossy peaks form and bowl cools. Beat in vanilla and salt at the end.
Remove pie from fridge. Spoon or pipe marshmallow topping over ganache, creating decorative swoops. Toast with a kitchen torch until golden brown in spots.
Scatter mini marshmallows and crushed graham crackers over the top. Drizzle with chocolate syrup. Slice with a warm, clean knife, wiping the blade between cuts.
