Ingredients
1litersparkling waterabout 34 fl oz; chilled

Instructions
Rinse the lemons well under cold running water, then pat dry. Slice each lemon into thin rounds about 1/4 inch thick, removing any visible seeds with the tip of your knife.
If using honey, combine 1 tablespoon honey with 2 tablespoons warm (not boiling) water in a small cup and stir until fully dissolved. This prevents the honey from sinking to the bottom of the drink.
Fill a large pitcher or individual glasses with ice cubes — about 1 to 1.5 cups in a pitcher or 3 to 4 cubes per glass. This keeps the drink cold and helps preserve the carbonation.
Drop the lemon rounds directly into the pitcher or place 2 to 3 slices per glass. Gently press one or two slices to release a little fresh juice directly into the water.
Slowly pour the chilled sparkling water over the ice and lemon slices to preserve as much carbonation as possible. Do not stir aggressively — a gentle swirl is all you need.
Pour the dissolved honey mixture into the pitcher and give it one gentle stir to incorporate evenly. Taste and adjust sweetness as needed.
Add fresh mint sprigs to each glass or tuck a small bunch into the top of the pitcher. Serve immediately for the best fizz and freshness.
Notes
Use fresh lemons, not bottled lemon juice — the flavor and appearance are far superior when using fresh lemon rounds.
Keep your sparkling water chilled in the fridge until the moment you pour it; cold liquid holds carbonation much longer than room-temperature liquid.
Always dissolve honey in a small amount of warm water before adding it to the drink, otherwise it will sink and clump at the bottom.
