This taco dip recipe is my go-to when I need a crowd-pleasing appetizer with zero stress. It starts with a creamy, taco-seasoned base and gets stacked with crisp lettuce, juicy tomatoes, and plenty of shredded cheddar. The best part is that nothing gets cooked — you mix, layer, chill, and scoop. It's fast, budget-friendly, and loved by kids and adults alike.

Equipment

  • 9-inch deep dish pie plate an 8x8 baking dish or shallow serving platter also works
  • Electric hand mixer a sturdy spatula and a little arm power will do in a pinch

  • Box grater for shredding cheese from a block

  • Chip and dip serving platter (optional) but handy for parties

Ingredients
  

  • 8 ounces cream cheese softened to room temperature
  • 1 cup sour cream
  • 1 ounce taco seasoning 1 packet, about 3 tablespoons
  • 2 cups iceberg lettuce shredded, about 1/4 of a large head
  • 1 1/2 cups Mexican blend cheese or sharp cheddar, shredded
  • 1 cup Roma tomatoes diced, seeded and patted dry, about 2 medium tomatoes
  • 1/2 cup black olives sliced, drained
  • 1/4 cup green onions sliced, about 3 onions
  • 2 tablespoons pickled jalapeños diced, optional
  • 2 tablespoons fresh cilantro chopped, optional
  • tortilla chips for serving
  • Fritos corn chips for serving

Instructions
 

  • Take the cream cheese out of the refrigerator about 30 minutes before you start so it can soften to room temperature. Rinse the lettuce, dry it very well, and shred it into thin ribbons; measure 2 cups and set aside.
  • Cut the Roma tomatoes in half and scoop out the seeds and watery pulp. Dice the firm flesh, measure 1 cup, and blot with a paper towel. Drain the olives and pat dry. Slice the green onions, dice the jalapeños, and chop the cilantro. Grate the cheese if using a block.
  • Add the softened cream cheese to a large mixing bowl and beat with an electric hand mixer on medium speed for about 1 minute, until smooth and creamy with no lumps.
  • Add the sour cream and taco seasoning packet. Beat on medium speed for another 1 to 2 minutes until fully combined and the color is even. Scrape down the sides and bottom of the bowl and give it one more quick mix.
  • Scoop the taco cream cheese mixture into the center of a 9-inch deep dish pie plate and spread it into a smooth, even layer that reaches all the way to the sides. Wipe any smudges off the rim with a paper towel.
  • Sprinkle the 2 cups of shredded lettuce evenly over the cream cheese base, covering the whole surface all the way to the edge. Press the lettuce down very gently with the back of a spoon so it settles in without crushing it.
  • Scatter the 1 1/2 cups of shredded cheese over the lettuce in an even blanket. Gently shake or tap the dish so the cheese settles into the lettuce.
  • Sprinkle the diced tomatoes over the cheese in an even layer. Scatter the sliced black olives and green onions on top. Add the diced pickled jalapeños if you like a little heat, saving a few slices for garnish.
  • Cover the pie plate loosely with plastic wrap or a lid and refrigerate for at least 30 minutes so the flavors can blend and the base firms up for easy scooping. For the crispest lettuce, serve within 4 hours of assembling.
  • Remove the plastic wrap and sprinkle the chopped cilantro over the top right before serving. Set the pie plate in the center of a large platter and surround it with tortilla chips and Fritos. Tell guests to scoop straight down through all the layers.

Notes

  • Soften the cream cheese fully — cold cream cheese leaves lumps that no amount of mixing can fix.
  • Seed and blot the tomatoes — wet tomatoes are the number one reason a taco dip turns watery at the bottom.
  • Dry the lettuce well — water clinging to the leaves will thin out the cream cheese layer over time.
  • Grate your own cheese — freshly shredded cheese tastes creamier and looks better than the pre-shredded kind.
  • Season boldly — taste the base before you spread it, because the fresh toppings dilute the flavor.
  • Use full-fat dairy — full-fat cream cheese and sour cream hold their shape and give you the creamiest texture.
  • Add toppings close to serving time — lettuce and tomatoes are at their best in the first few hours after assembly.
  • Choose sturdy chips — thick, scoop-style chips will carry a hearty scoop without snapping.
  • Make-ahead method: Spread the cream cheese base in the dish up to 1 day ahead, cover it, and add the toppings 1 to 2 hours before serving.
  • Storage: Cover tightly and store in the refrigerator for up to 2 days. The lettuce will soften a bit as it sits. Freezing is not recommended, because the cream cheese and sour cream can separate and the fresh vegetables turn mushy.
  • Variations: Add a layer of refried beans and guacamole for a seven layer taco dip, brown ground beef for a meaty version, or swap sour cream for plain Greek yogurt for a lighter dip.
  • Food safety: Do not leave the dip at room temperature for more than 2 hours, or 1 hour on a hot day.
