Ingredients
  

For the Brownie Base

  • 1/2 cup unsalted butter 113g, cut into pieces
  • 4 oz semisweet chocolate 113g, chopped
  • 3/4 cup granulated sugar 150g
  • 2 large eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour 65g
  • 2 tablespoons unsweetened Dutch-processed cocoa powder
  • 1/4 teaspoon salt

For the Chocolate Mousse

  • 1 packet unflavored gelatin 2 1/4 teaspoons
  • 3 tablespoons cold water
  • 8 oz semisweet chocolate 225g, finely chopped
  • 2 1/2 cups cold heavy whipping cream 600ml, divided into 1/2 cup and 2 cups
  • 1/4 cup powdered sugar 30g
  • 1 teaspoon pure vanilla extract

For the Chocolate Ganache

  • 6 oz semisweet chocolate 170g, finely chopped
  • 3/4 cup heavy whipping cream 180ml
  • 1 tablespoon unsalted butter

Instructions
 

  • Position an oven rack in the center of the oven and preheat to 350°F (175°C). Grease the sides of a 9-inch springform pan and place a parchment paper round on the bottom.
  • Melt the butter and 4 oz chopped semisweet chocolate in a medium saucepan over low heat, stirring constantly until smooth. Remove from heat and whisk in the granulated sugar. Cool for 5 minutes.
  • Whisk the eggs into the cooled chocolate mixture one at a time, then stir in the vanilla. Sift in the flour, cocoa powder, and salt, then fold gently until no dry streaks remain.
  • Pour the batter into the prepared pan and spread evenly. Bake for 20 to 25 minutes, until the edges look set and a toothpick comes out with a few moist crumbs. Cool completely on a wire rack, about 45 minutes.
  • Sprinkle the gelatin over the cold water and let it sit for 5 minutes. Place the 8 oz finely chopped chocolate in a large heatproof bowl. Heat 1/2 cup heavy cream until steaming, stir in the bloomed gelatin until dissolved, and pour over the chocolate. Let stand 2 minutes, then whisk until smooth. Cool for 15 to 20 minutes.
  • Pour the remaining 2 cups cold heavy cream into a chilled mixing bowl. Add the powdered sugar and vanilla. Beat on medium-high speed until soft to medium peaks form, about 2 to 3 minutes.
  • Stir one third of the whipped cream into the cooled chocolate mixture to lighten it. Fold in the remaining whipped cream gently until no white streaks remain. Pour over the cooled brownie base and smooth the top.
  • Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, until the mousse is firm when gently pressed.
  • Place the 6 oz finely chopped chocolate in a heatproof bowl. Heat the 3/4 cup heavy cream until steaming, pour over the chocolate, let sit 2 minutes, add the butter, and whisk until smooth. Cool for 10 to 15 minutes, then pour over the chilled mousse and spread to the edges. Refrigerate for 2 hours until set.
  • Run a thin knife dipped in hot water around the edge of the pan. Release the springform latch and lift away the sides. Garnish with chocolate shavings and strawberries if desired. Slice with a hot knife, wiping between cuts.

Notes

  • Chop the chocolate finely: Small, even pieces melt quickly and smoothly without the need for extra heat.
  • Weigh the chocolate: A digital kitchen scale keeps your layers balanced, since chocolate is measured by weight.
  • Cool the chocolate before folding: If the chocolate is warm, it will melt the whipped cream and leave the mousse runny.
  • Do not overwhip the cream: Soft to medium peaks fold in easily and give you the silkiest texture.
  • Work quickly once the mousse is mixed: The gelatin starts setting as it cools, so pour and smooth right away.
  • Chill the bowl and beaters: Cold tools help the cream whip faster and hold more air.
  • Use a hot knife: Dip the blade in hot water and wipe it dry between slices for clean edges.
  • Give it time: Six hours is the minimum, and overnight is even better for slicing.
  • Storage: Store in an airtight cake carrier or covered container in the refrigerator for up to 4 days.
  • Freezer: Freeze whole or sliced pieces on a tray until solid, then wrap tightly and store for up to 1 month. Thaw overnight in the refrigerator.
  • Variations: Add 2 teaspoons instant espresso powder for mocha, use dark chocolate in mousse and milk chocolate in ganache, spread raspberry jam over the brownie base, add orange zest to ganache, or drizzle warmed peanut butter over ganache and swirl.
