Instructions
Pour coarse sea salt onto a shallow plate. Run a lime wedge around the rim of each glass, then dip and twist the rim in the salt to coat evenly. Set aside.
Roll limes and oranges on the counter to release more juice, then cut and juice them. Measure out 1 cup lime juice and 1/2 cup orange juice, straining through a fine mesh strainer if you prefer no pulp.
Combine equal parts sugar and water in a small saucepan, heat over medium stirring until dissolved, then cool to room temperature. Alternatively, use agave nectar straight from the bottle.
Add lime juice, orange juice, and simple syrup to a cocktail shaker, then fill halfway with ice. Secure the lid tightly.
Hold the shaker firmly and shake vigorously for 15–20 seconds until the outside feels very cold and you can hear ice moving freely inside.
Fill the salt-rimmed glasses with fresh ice, strain the margarita mixture over the ice, and top with a splash of sparkling water if desired. Garnish with a lime wheel and serve immediately.

Always use freshly squeezed lime and orange juice — bottled juice significantly affects the flavor.
