Instructions
Combine ½ cup sugar and ½ cup water in a small saucepan over medium heat, stirring constantly until the sugar is fully dissolved and the liquid is clear, about 2–3 minutes. Remove from heat and allow to cool completely before using (or refrigerate for 10–15 minutes to speed things up).
Rinse 10–12 fresh mint leaves gently and pat dry. Cut one lime into wedges (2 for muddling, remaining for garnish) and juice one lime to get 1 oz of fresh lime juice; set aside.
Place the mint leaves and 2 lime wedges in the bottom of a tall glass, then press and twist firmly with a muddler 4–6 times until the lime releases its juice and the mint releases its oils — you should smell a bright, minty citrus aroma. Do not over-muddle or the mint will turn bitter.
Pour the 1 oz of fresh lime juice and 1 oz of simple syrup over the muddled mixture, then stir briefly with a bar spoon to combine. Taste and add more syrup if you prefer a sweeter drink.
Fill the glass generously to the top with crushed ice or ice cubes, pressing down lightly to pack it in for a seriously cold drink.
Slowly pour 1 cup of chilled club soda over the ice to preserve carbonation, then gently stir once or twice with a bar spoon to just combine without deflating the bubbles.
Clap a fresh mint sprig between your palms to release its aroma, then tuck it into the top of the glass alongside a lime wheel on the rim. Serve immediately with a straw while ice cold.
Notes
Don't over-muddle: Press gently and firmly 4–6 times. Over-muddling breaks down mint leaves and releases chlorophyll, which makes the drink taste bitter and grassy.
Use fresh mint only: Dried mint won't work here. Spearmint is the traditional choice and has a sweeter, more rounded flavor than peppermint.
Always use fresh lime juice: Bottled lime juice lacks the brightness and complexity of freshly squeezed. It makes a noticeable difference in the final flavor.
Chill your glass: Pop glasses in the freezer for 10–15 minutes before assembling to keep the drink colder for longer.
Keep club soda cold: Warm sparkling water goes flat much faster. Pull it straight from the fridge right before pouring.
Make-ahead tip: Muddle the mint, lime wedges, lime juice, and syrup together and store in a sealed jar in the fridge for up to 8 hours. Add ice and top with club soda just before serving.
Simple syrup storage: Homemade simple syrup keeps in a sealed jar in the refrigerator for up to 2 weeks.
Reduce sweetness: Start with 1 tablespoon of simple syrup per glass and add more to taste for a less sweet version. For a sugar-free option, use monk fruit simple syrup.
