For the Rim 2 tablespoons coarse sea salt or kosher salt 1 lime wedge for rimming glasses For the Drink 1 cup fresh grapefruit juice 240ml, preferably pink or ruby red grapefruit 2 tablespoons fresh lime juice 30ml, from about 1 lime 2 tablespoons simple syrup 30ml, or agave nectar, adjust to taste 3/4 cup sparkling water 180ml, chilled ice cubes For Garnish 2 grapefruit slices or lime wheels fresh mint sprigs optional
Pour coarse salt onto a small plate. Run the lime wedge around the rim of each glass, then dip the rim into the salt to coat.
Fill each prepared glass with ice cubes.
In each glass, combine half the grapefruit juice, half the lime juice, and half the simple syrup. Stir gently to mix.
Top each glass with sparkling water and give a gentle stir to combine.
