Instructions
Add the strawberries, lime juice, simple syrup, and ice cubes to a high-powered blender. Blend on high speed for 30-60 seconds until smooth and slushy.
Check the consistency and add water or more ice if needed to reach desired thickness. Taste and adjust sweetness by adding more simple syrup if desired.
Pour into chilled glasses and garnish with fresh strawberry slices and lime wheels if desired. Serve immediately while frozen.
Notes
Use frozen strawberries instead of fresh for an even thicker, icier texture. Reduce ice to 1 cup if using frozen fruit.
For a sweeter drink, increase simple syrup to 1/4 cup. For a tangier version, add an extra tablespoon of lime juice.
Make simple syrup by heating equal parts sugar and water until dissolved, then cooling completely. Store refrigerated for up to 1 month.
Substitute honey, agave nectar, or maple syrup for simple syrup, but note this will change the flavor slightly.
Add a splash of sparkling water or lemon-lime soda for a fizzy twist just before serving.
For a tropical variation, add 1/2 cup fresh or frozen pineapple chunks or 1/4 cup coconut cream.
This drink is best enjoyed immediately but can be stored in the freezer for up to 2 hours. Re-blend briefly before serving if it separates.
For a slushier texture, freeze the strawberries and lime juice in ice cube trays ahead of time, then blend with less additional ice.
Scale the recipe up easily for parties—just multiply ingredients by the number of servings needed.
Use a high-powered blender like a Vitamix or Blendtec for the smoothest consistency without chunks of ice.
