Instructions
Remove the rind from the watermelon and cut the flesh into rough 1–2 inch cubes, removing any visible seeds. Measure out 6 cups of chunks.
Add the watermelon chunks and 1 cup of cold water to a blender. Blend on high for 30–45 seconds until completely smooth, working in batches if needed.
Pour the blended mixture through a fine mesh strainer into a large pitcher, pressing the pulp with a spoon to extract all the liquid; discard the pulp. Skip this step if you prefer a pulpier drink.
Add the fresh lime juice, 2 tablespoons of sugar or agave nectar, a pinch of salt, and the remaining 1 cup of cold water to the pitcher; stir well to combine.
Taste the agua fresca and adjust sweetness with more sugar, brightness with more lime juice, or dilute further with a splash of water until the flavor is balanced to your liking.
Refrigerate for 15–20 minutes if time allows, then stir, pour over ice into tall glasses, and garnish with fresh mint and a lime wheel if desired.
Notes
Choose a ripe watermelon: Knock on it — it should sound hollow. Deep red or pink flesh means maximum sweetness and flavor.
Agave vs. sugar: Agave nectar dissolves instantly in cold liquid and is the better sweetener for this recipe. If using granulated sugar, stir until fully dissolved before serving.
Don't skip the salt: Just a tiny pinch enhances the sweetness of the watermelon without making the drink taste salty.
