Ingredients
  

  • 1 cup mayonnaise 240ml, Japanese Kewpie mayo recommended
  • 2 tablespoons tomato paste 30ml
  • 1 tablespoon butter 15ml, melted and slightly cooled
  • 1 tablespoon rice vinegar 15ml
  • 1 tablespoon water 15ml
  • 1 teaspoon sugar 5ml
  • ½ teaspoon garlic powder 2.5ml
  • ½ teaspoon paprika 2.5ml
  • ¼ teaspoon cayenne pepper 1.25ml, optional for heat

Instructions
 

  • Add mayonnaise, tomato paste, and melted butter to a medium mixing bowl.
  • Pour in rice vinegar, water, sugar, garlic powder, paprika, and cayenne pepper if using.
  • Whisk vigorously until completely smooth with no streaks of tomato paste and uniform pink color throughout.
  • Taste and adjust consistency by adding water one teaspoon at a time if too thick, or adjust seasonings as needed.
  • Transfer to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • Use quality mayonnaise for best results - Japanese Kewpie mayo creates the most authentic flavor and creamier texture
  • Don't skip the chilling time - the sauce tastes significantly better after resting in the fridge for at least 30 minutes
  • For even better flavor development, let the sauce sit overnight in the refrigerator
  • Start with less cayenne pepper and add more to taste - you can always add heat but can't take it away
  • Store in an airtight container in the refrigerator for up to 2 weeks
  • Shake or stir before using as ingredients may separate slightly over time
  • Substitute 3 tablespoons ketchup for tomato paste if needed, but reduce sugar slightly to compensate for sweetness
  • Thin with additional water or rice vinegar to use as a salad dressing
  • Double the batch - this sauce disappears quickly and stores well
