1 cup mayonnaise 240ml, Japanese Kewpie mayo recommended 2 tablespoons tomato paste 30ml 1 tablespoon butter 15ml, melted and slightly cooled 1 tablespoon rice vinegar 15ml 1 tablespoon water 15ml 1 teaspoon sugar 5ml ½ teaspoon garlic powder 2.5ml ½ teaspoon paprika 2.5ml ¼ teaspoon cayenne pepper 1.25ml, optional for heat
Add mayonnaise, tomato paste, and melted butter to a medium mixing bowl.
Pour in rice vinegar, water, sugar, garlic powder, paprika, and cayenne pepper if using.
Whisk vigorously until completely smooth with no streaks of tomato paste and uniform pink color throughout.
Taste and adjust consistency by adding water one teaspoon at a time if too thick, or adjust seasonings as needed.
Transfer to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.
